Meatless Monday: Carrot Garam Masala Soup

Where did summer go? It seems like one day we were slipping on our sandals, the next we were pulling out the winter boots!

If there is one food that I crave when the weather turns cold, its soup! There are few things more comforting than coming home after a long day and digging into a bowl of satisfying soupy goodness. And when it’s autumn time, you know I will be using some fresh goodies from the garden – like carrots, onion and garlic! If you have some of those basic ingredients kicking around your pantry and fridge, why not give this Carrot Garam Masala Soup a try to warm up your belly on a chilly day?

This recipe is great for batch cooking and leftovers, and the flavour improves even more after a day in the fridge. It is also great to bring as part of a healthy lunch – just pack in a mason jar and voila!

Carrot Garam Masala Soup

Makes around 8 servings (around 1.5 cups each)

Ingredients

1 medium sweet onion, chopped
4-6 cloves of garlic, chopped
6 cups of carrots, chopped
1 medium apple, cored and chopped
1 cup dry red lentils
1/2 tbsp ginger, minced/grated
2 tsp garam masala
1 tsp turmeric
8 cups vegetable broth
2-3 tbsp oil
Optional: coconut milk and/or hot sauce

Instructions

1. In a large pot, cook the onion and garlic in the oil for a few minutes on medium heat until soft. Lower the heat a bit and add the garam masala and turmeric. Heat for a few minutes until fragrant.

2. Add the vegetable broth and increase the heat to medium-high. Add the carrots, apple, ginger and dry red lentils and bring to a light simmer.

3. Cook until lentils and carrots are soft, then puree with a stand blender or immersion blender (Note: if using a stand blender allow the soup to cool beforehand to avoid burns).

For improved flavour, cook the soup on the stove for another 10-15 minutes to further release the flavours!
